PARMESAN FISH
1 1 / 2 pounds white fish (tilapia is a good choice)
3 / 4 cup dry bread crumbs
3 tablespoons Parmesan cheese
2 tablespoons parsley
1 / 2 teaspoon paprika
1 / 8 teaspoon pepper
1 / 8 teaspoon oregano
1 / 8 teaspoon basil
1 / 2 cup melted butter or margarine
Preheat oven to 375 degrees.
Spray baking pan with cooking spray. Combine bread pepper, cheese, parsley, paprika, pepper, oregano and basil in a shallow bowl or pan. Coat fish pieces with melted butter. Coat evenly covers with the mixture of bread crumbs. Bake at 375 degrees for 20-25 minutes until the fish.
NEW RED POTATOES WITH PARSLEY
1 1 / 2 pounds small red potatoes new, washed
1 tablespoon vegetable oil
1 medium yellow onion, chopped
1 small clove garlic, minced
1 cup chicken broth
1 cup chopped fresh parsley, divided
1 / 2 teaspoon pepper
Peel a strip of scaling around the center of each potato. (You can skip this step, if desired.) Place potatoes in cold water and set aside.
Heat a large skillet over medium-high heat, add oil. Sauté onion and garlic for 5 minutes or until tender (not allowed to burn the garlic!) Add the broth and 3 / 4 cup parsley to skillet and mix well. Bring the mixture to a boil. Place the potatoes in a single layer in skillet. Return to boil, reduce heat to simmer. Simmer, covered, for 10 minutes or until tender. Remove the potatoes in a dish with a slotted spoon. Add the pepper to the skillet and stir to mix. Pour sauce over potatoes. Sprinkle the remaining cup quarter of parsley over potatoes.
