Brit / UK friends .. help me out. Traditional Guinness / Stout beer battered fish and chips recipes please?

I have a guiness and vinegar malt battered fish and chips at a pub in Piccadilly, in the U.S. and I loved it .. I know its not traditional English .. but the closest we have. I know how to cook real English fish and chips (obviously I know how to cook potato chips … but the fish I need help) How do SHAKE YOUR FISH?

I am a former chef from Canada and have done several times, is really the same as a normal fish mass with the substitution of Guinness for liquid, here in Canada I can buy a dark beer without alcohol and use it, first to measure 2 cups AP flour, 1 / 2 cup cornstarch or rice flour, 2 eggs (whole) salt, 2 tablespoons vegetable oil, salt and white pepper and mix of moisture and a beer? and eggs and whisk slowly into the dry ingredients. Let the mixture stand for 15 minutes at the time the oil is hot, and the potatoes peeled and ready to fry there seconds after the fish is ready, just below dry or roll fish in flour before dipping in the mixture, and cook for only 1 or 2 max at a time (5-6 minutes at 350 F d), or oil and grease to cool, then of the fish is done, keep warm in oven while cooking chips, prepare everything and serve immediately with malt vinegar, salt and tartar sauce if necessary (Blech)
