Knowing When the Fish is done

A general time frame for preparing fish is approximately 8-10 minutes for every inch of thickness or about 4 to 5 per half inch.

Use a fork to keep into the thickest part of the fish to test for doneness. Poke the fork in a little way and peel back a bit, and the fish should be opaque and its juices milky white. Underdone fish will be translucent with the juices being clear and watery. Over done fish will be dry and easily parted.

Use an instant read thermometer to check the doneness of the fish. Just stick it in the thickest part of the fish to check for doneness. Fish is done at 145 ºF.

Ingredients:

3 large potatoes, cubed

1 whole lemon

Salt

Celery, finely chopped

Fresh cod, about 1 and ¼ pounds

1 whole egg

4 tablespoons of olive oil

2 cups of chicken stock

3 tablespoons of chopped parsley

Chopped half of red bell pepper

2 cups of bread crumbs

Garlic

2 tablespoons of all-purpose flour

¼ cup of all purpose cream

Chopped shallot

Now that you have the ingredients, it is time to cook. Boil the peeled potatoes for 15 minutes or until tender.  While doing so, season the fish with lemon, salt, pepper and add then cook in a non-sticky skillet that has simmering water. The water volume should only be about half an inch high. Cook the seasoned codfish for eight minutes. Once cooked, drain and then flake the fish in a bowl. Make sure you remove all bones. Heat another skillet and add the olive oil. Add the seasoning, egg and bread crumbs but leave a few bread crumbs and then continue cooking. After cooking, you need to form fish patties and toss these patties in the remaining bread crumbs. Add ore bread crumbs if necessary.

Cook the patties in medium heat like you would a hamburger. On a different skillet, cook shallots, bell pepper, flour, and chicken broth. Go back to the potatoes, drain it, and add garlic and cream. Serve hot.

Chopped Cod Salad

Ingredients

8 ounces of bacon

1/2 cup dried cranberries

1 large apple, peeled and diced

6 ounces blue cheese

8 ounces baby arugula

1/2 cup toasted walnut halves

Salad Dressing Ingredients

3 tablespoons apple cider vinegar

2 tablespoons squeezed orange juice

1 teaspoon grated orange zest

2/3 cup good olive oil

2 1/2 teaspoons mustard

2 tablespoons maple syrup

salt

1/2 teaspoon ground black pepper

This is a difficult salad to make because it requires baking. However, you can substitute the baking with roasting or shallow frying. Nevertheless, this is a very healthy salad that is really worth your while and something that your entire family will love. The first step is to preheat the oven at 400 degrees Fahrenheit. Get a baking pan and grease it. Lay the bacons and roast for 20 minutes. In a large bowl, mix the arugula, walnuts, apple, cranberries, and blue cheese. On another bowl, whisk the vinegar, orange zest, mustard, orange juice, maple syrup, salt, olive oil, and pepper. This will be your salad dressing. Once the bacon has cooled, chop them and add to the salad. Serve immediately.

Easy Shrimp and Egg Crescent Bake

8 to 10 servings

Ingredients

Base

1/2 cup chopped onion
1/2 cup chopped green bell pepper
3 tablespoons margarine or butter
12 eggs beaten
6 ounces (1 1/2 cups) cooked shrimp
1 cup sliced fresh mushrooms
Sauce
2 tablespoons margarine or butter
2 tablespoons flour
1 1/4 cups half−and−half
1 cup shredded Swiss cheese or mozzarella cheese
1/4 cup Parmesan cheese
3 tablespoons dry white wine (optional)

Topping

1 (8 ounce) can crescent rolls
1 tablespoon margarine or butter, melted
1 tablespoon chopped fresh parsley

Preparation

Preheat oven to 350 degrees F. Lightly grease a 12 x 8−inch (2−quart) baking dish.
In large skillet over medium heat, cook onion and green pepper in 3 tablespoons margarine until crisp and tender. Add eggs, cook just until eggs are set, stirring occasionally. (eggs will be moist on top) fold in shrimp and mushrooms.

In medium saucepan, melt 2 tablespoons margarine. Blend in flour, cook and stir until smooth and bubbly. Gradually add half and half, cook until mixture boils and thickens, stirring constantly. Add Swiss cheese, Parmesan cheese and wine, if desired. Stir until smooth.

Fold sauce into scrambled egg mixture. Pour into greased pan or baking dish. Remove dough from can in 2 rolled sections (DO NOT UNROLL DOUGH). Cut each roll into 6 slices, then cut each slice in half.

Arrange 20 slices flat edge down around edges of pan or baking dish, arrange remaining 4 slices in center.

In small bowl, combine 1 tablespoon margarine and parsley, brush over dough slices.
Bake for 25 to 35 minutes or until eggs are set and crust is golden brown. Let stand 5 minutes before serving, allowing the bake to cool down a little as it will be piping hot in the middle.

Rival FD350S Electric Fondue Set For Adventurous Cooking At Home

What a special meal, when you and your guests all cook your own food at the table.Our family just love a fondue, we often have them as a special celebration meal, when we get together, for example at Christmas.

A meat fondue is a firm favourite as a Christmas Eve or New Year’s Eve meal.

We have a couple, or is it three, of the old fashioned candle fired or spirt fondues, which we have collected or been given over the years. These are perfectly OK until the spirit or the candle dies and we want to continue eating. Then they are so fiddly to start a new candle or spirit box (if you can find one), because you have a hot pan on the table.The oil, cheese or chocolate cools down and can spoil the meal a bit. This is of course never a problem with the electric fondue.

One important point I must mention is that it is vital to make your cheese or chocolate mixture on the stove and then transfer it to the stainless steel pot on the table, as you often need to vary the temperature when mixing the cheeses or the chocolate and the cream and this is much easier in the kitchen.

The electric fondue set works perfectly with oil and savoury broths, as the temperature stays nice and high, ensuring that the meat or fish cooks quickly. Vegetables cook very quickly too, we especially like mushrooms, both white and brown ones, cooked with the meat in oil or broth. But remember the cooking time for such soft vegetables is very short as the oil etc gets very hot.

A friend of mine uses her fondue for a Chinese hotpot, where she cooks very thin slices of meat,sometimes still frozen, in a spicy stock.

I bought my niece this model of electric fondue, as a wedding present and for the first months of her marriage she used it to cook most of the time, as she did not have any other cooking pots. Even with all that use, it is still looking shiny and smart many months later.

At the time, my main reason for buying this particular model was that it did not have a non stick lining. The problem with a non stick coating in a fondue pot is that over time it gets scratched by the forks. It does not matter how careful you are and this then looks awful for something you use for guests. The stainless steel is much less affected and can continue looking great for years.

We will sometimes use three pots for a meal. The electric pot for the main dish with meat, along with vegetables, pickles and salads. Next my spirit heated one, for a cheese fondue, because it is a ceramic pot. I do think cheese somehow looks better from a ceramic pot; then finally I have a tiny candle heated pot for those guests who must have a pudding after their meal. It is really very small but usually big enough for enough yummy chocolate to satisfy those few guests with some spaces left to fill.

I would really like three electric pots but I cannot bring myself to throw away working fondues, but if one breaks I know what I will replace it with.

The only down side to this product in my opinion, is the short electrical cord. I quite understand that it is probably seen as safer and it stops the cord getting into a tangle, but it does mean that to use it in my dining room, we have to use an extension cord, which is not too elegant if we have guests.

All in all I would recommend this product as a gift or for home use, for both new and experienced fondue cooks.
