- Salmon with lemon capers, and Romero
Ingredients
4 (6-ounce) salmon fillets
1 / 4 cup of extra virgin olive oil
1 / 2 teaspoon salt
1 / 2 teaspoon freshly ground black pepper
1 tablespoon chopped fresh rosemary leaves
8 slices of lemon (about 2 limes)
1 / 4 cup lemon juice (about 1 lemon)
1 / 2 cup wine Marsala (or white wine)
4 teaspoons capers
4 pieces of aluminum foil
Instructions
Brush top and bottom of salmon fillets with olive oil and season with salt, pepper and rosemary. Place each piece of seasoned salmon on a piece of paper large enough to fold over and seal. Top each piece of salmon with 2 lemon slices, 1 tablespoon lemon juice, 2 tablespoons of wine and 1 teaspoon capers. Wrap salmon strongly in foil packets.
Place a grill pan over medium-high heat or preheat a charcoal grill or gas. Place paper packages aluminum on the hot grill and cook for 10 minutes for a 1-inch piece of salmon. Serve in foil packets.

- Jerk rubbed Grilled Whole Fish with Hot Vinegar (Escovitch) Salsa
Ingredients
2 tablespoons ground coriander
2 tablespoons ground ginger
2 tablespoons brown sugar
1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon kosher salt
1 teaspoon habanero chile powder
2 teaspoons coarsely ground black pepper
2 teaspoons dried thyme
1 teaspoon ground cinnamon
1 teaspoon ground allspice
1 teaspoon cloves
1 red snapper, scaled and gutted
Escovitch Salsa, recipe follows
Instructions
Preheat grill medium-high heat. Combine all spices in a medium bowl. Set aside half of the spice rub in an airtight container for another use, store at room temperature up to 6 months.
Rub both sides of fish with the remaining half of the spice rub. Grill on both sides for about 4-5 minutes per side or until are cooked. Remove from grill and immediately pour the sauce over fish and serve Escovitch.
Escovitch Sauce:
1 Spanish onion, halved and thinly sliced
1 / 2 Scotch bonnet pepper, finely chopped
1 1 / 2 cups white wine vinegar
allspice berries 3
Combine all ingredients in small saucepan. Bring to a boil over medium heat on the grates of the grill or in a burner. Simmer slow for a couple of minutes and then pour over fish.
