Wine Dinner – Grilled Salmon and Pinot Noir Marinade a crowd pleaser

Since the columnist: Since the joy of my wife Karen and I have to entertain our friends and family and our love of good food and wine, this column is co-author of the two. Karen focus on recipes, and can seep into some tips for entertaining, while associate wine with what Karen has cooking.
Most summers, my wife Karen and I try to take a couple of concerts somewhere; local venues, Ravinia and the Centre Chicago. It's always fun to go with other couples and although we usually eat near the concert site, we also met before the concert and grill a simple meal at home. This is Convenient and affordable, allowing the group members (who are not driving) to share some nice wine with a healthy meal.
In a recent order week, we went to Ravinia. Instead of the traditional picnic on the lawn, the group chose to dine at home, then travel to Highland Park. Karen asked me to select some wines for the occasion. We started with a variety of sandwiches – shrimp crostini, caprese skewers and a simple source with Brie cheese, apple slices, red grapes and a French baguette slices.
The dinner menu included grilled salmon with a pinot adobo black, mixed white and wild rice, dried cherries and sliced toasted almonds and grilled asparagus with blue cheese and balsamic vinaigrette.
Wine basics
When entertaining a group, is generally better to offer both a red and white wine. Summer picnic wines should be light, refreshing and easy to drink. They should also be able to be served slightly cold. Karen was easy menu-side pair of red wine such as pinot black wine is included in the marinade, mix well with the salmon and can be served slightly chilled with great results. I am a big fan of pinot noir, as it is a versatile wine that works well with a variety of foods. Its acidity helps balance the rich, fatty salmon making it a great choice.
On the side of white wine, a light, crisp and refreshing wine is ideal. Italian whites are a great option for the menu Karen, but the acidity of the balsamic vinaigrette should be taken into account. While best known Italian pinot grigio white and has universal appeal, not the best possible way because of their acidity. One solution is to find a wine-style blend of pinot grigio and another varietal that offers less acidity, resulting in a better match for a vinegar-based dressing. One of my recommendations is the mix Masi Winery pinot grigio and Verduzzo therefore a pleasant wine, fruity style. Another Italian variety is even and Trebbiano. It a light and refreshing summer wine that goes well with picnic dishes.
So, to please a group and to complement this special menu, we recommend that provide both a white and red wine, in this case, a pinot noir and pinot grigio wine mixture or white Trebbiano.
Food pairings
Fast, easy and healthy – there are three perfect words we love to hear when thinking about dinner. This marinade calls for pinot black, perfect pairing with salmon. Therefore, open the bottle of pinot a little early and steal a cup of this delicious marinade. The recipe is adapted from Harvest restaurant where fried fish (instead of grilled) and served on a bed of mashed potatoes.

2 salmon fillets, rinsed and dried
1 cup pinot noir
2 shallots, peeled and sliced
2 springs fresh thyme, chopped
1 tablespoon sugar
1 teaspoon whole peppercorns
Serves two.
Combine marinade ingredients in a large zippered bag or nonreactive dish covered. Add salmon and turn to coat. Refrigerate, turning several more times, at least 30 minutes but no more than an hour. Place salmon on grill basket hinges. Grill for about 5-7 minutes per side or until fish.
